Eight expressions of Georgian tea — from fresh greenery and floral nuances to berries, cocoa, smoke, and dried fruit.
Before you is a tasting collection of eight distinctive teas, created to introduce you to the main flavours and styles of our tea manufactory. The collection includes green tea, light and dark oolongs, classic and experimental black teas, GABA oolong, and sheng.
Each tea reveals a different aspect of Zedubani’s high-mountain terroir. One invigorates with vivid freshness, another brings deep relaxation, while others surprise with notes of cold smoke, berry jam, or sweet meadow herbs.
The collection’s flavour profile: multifaceted and contrasting. Herbal, floral, honeyed, nutty, berry-like, smoky, and spicy nuances come together in one set. You can taste the teas individually, compare them with one another, and gradually discover your favourite profile.
Effect: varies from tea to tea. The collection includes options for a clear and energised morning, focused work, a peaceful afternoon, a long conversation, and a deeply relaxed evening.
Who will enjoy it: those who want to discover Georgian tea and understand the differences between green tea, oolongs, black teas, and sheng. The collection is also suitable for experienced tea drinkers who appreciate unusual processing methods and want to explore several flavours without purchasing full-sized packages.
Teas Included in the CollectionGABA oolong. A smooth and rich tea with a fruity, honeyed character and an effect of deep relaxation. Its flavour reveals ripe fruit, dried fruit, honey, and light caramel. It is well suited to evenings, rest, and quiet conversation.
Classic green tea. A fresh and expressive tea with a vivid herbal flavour and a distinct umami note. Its aroma carries young greenery, meadow herbs, and delicate floral nuances. The tea gently invigorates and helps improve concentration.
Light oolong. A delicate, floral, and naturally sweet tea with notes of white flowers, ripe pear, peach, and light honey. It can be infused up to 10 times, allowing you to observe how its flavour changes with every new infusion. Light oolong is also excellent for cold brewing.
Dark oolong. A deep and warming tea with expressive notes of cocoa and nuts. Its flavour also reveals nuances of dried fruit, caramel, and warm wood. It is ideal for unhurried tea sessions and cool evenings.
Classic black tea. A rich and balanced tea with the recognisable character of Georgian black tea. Its flavour combines dark honey, dried fruit, floral nuances, and delicate astringency. A familiar, deep, and versatile choice for everyday drinking.
Black tea cold-smoked over acacia wood. An expressive tea with a delicate aroma of wood smoke. Cold smoking does not overpower the flavour of the leaves but adds notes of acacia wood, dried fruit, and warm spices. Its smoky character unfolds gradually and remains smooth.
Shai Hong. A bright and aromatic tea with notes of berry jam and spices. Its flavour reveals dark berries, ripe plum, sweet spices, and gentle honeyed warmth. The tea is rich without being heavy.
Sheng. A vibrant and multilayered tea with notes of sweet herbs and dried fruit. It begins with fresh meadow greenery, followed by nuances of honey, dried apples, pear, and delicate natural astringency. With every infusion, the flavour becomes smoother and deeper.
Discovering Different Tea StylesThe collection is built around contrasts. It allows you to compare the freshness of green tea with the floral softness of light oolong, the depth of dark oolong with the richness of black tea, and the calm character of GABA oolong with the vibrant, evolving flavour of sheng.
The experimental teas hold a special place in the collection. Cold smoking over acacia wood gives the black tea a smooth smoky nuance, while Shai Hong reveals an unusual combination of berry jam and warm spices.
Eight teas — eight different experiences. You do not need to choose between green tea, black tea, or oolong in advance. You can taste each style, compare their aromas, and discover which flavours suit you best.
Where These Teas Are GrownThe teas in this collection are grown in the high-mountain gardens of Zedubani, where cool nights, sunny days, and pure mountain air encourage the tea leaves to develop slowly.
At high altitude, the tea bush grows more slowly, allowing the leaves to gradually accumulate aromatic compounds, amino acids, and polyphenols. Different processing methods reveal the same terroir in different ways — from young greenery and flowers to honey, berries, nuts, cocoa, and wood smoke.
The tea leaves are picked by hand. Only healthy and properly developed shoots are selected, after which each tea undergoes its own method of withering, oxidation, rolling, heating, or smoking.
How to Conduct a TastingBegin with the lightest teas and gradually move towards the richer ones. The recommended order is: classic green tea, light oolong, sheng, GABA oolong, dark oolong, classic black tea, Shai Hong, and cold-smoked black tea.
Use clean, soft water and, whenever possible, the same type of teaware for each tea. Do not add sugar, milk, or flavourings, as they will prevent you from fully experiencing the differences between the teas.
Take a short break between tastings and drink a little clean water. Pay attention not only to the first sip but also to the aroma of the dry leaves, the colour of the infusion, the aftertaste, and how the tea changes with repeated brewing.
How to BrewFor most teas, use 4–5 grams of leaves per 250 ml of water. Brew green tea at 75–80°C, light oolong and sheng at 80–85°C, and the remaining teas at 85–90°C.
Begin with a steeping time of 1.5–2 minutes for green tea and light oolong. Richer teas can be steeped for 2–3 minutes. Gradually increase the steeping time with each subsequent infusion.
To cold-brew the light oolong, pour cool water over the leaves and leave them in the refrigerator for several hours. This method reveals the tea’s natural sweetness, floral aroma, and smooth fruity nuances.
The Tea Tasting Collection is an opportunity to travel from fresh greenery to deep smoky and spicy nuances, discover the character of each tea, and find the one you will want to return to.
