Classic Green Tea

The freshness of mountain herbs, a clean flavour, and the natural energy of the tea leaf.

Before you is a hand-picked classic high-mountain green tea, grown in the gardens of Zedubani. Gentle processing helps preserve the leaf’s natural freshness, rich aroma, and clean, expressive flavour.

Aroma: fresh, green, and multilayered. From the first moments, you can sense young herbs, wildflowers, and tender leaves. Delicate notes of green apple, meadow clover, and freshly cut greenery emerge later, adding depth and natural freshness to the aroma.

Taste: clean, full-bodied, and slightly astringent. It begins with notes of young greenery and fresh herbs, followed by hints of green apple, flowers, and a light natural sweetness. A delicate bitterness quickly softens, leaving a long and refreshing aftertaste.

Effect: invigorating, clear, and balanced. The tea gently awakens you, helps you focus, and supports concentration without feeling excessively sharp or stimulating. It is ideal for the beginning of the day, a break from work, or a relaxed afternoon tea.

Who will enjoy it: those who appreciate the classic taste of green tea without flavourings or excessive sweetness. It is suitable both for experienced green tea drinkers and for those discovering high-mountain Georgian teas for the first time. It has character and intensity while remaining clean, fresh, and approachable.

What Makes This Green Tea Classic

Classic green tea undergoes minimal processing designed to preserve the fresh character of the newly harvested leaf. After picking, natural oxidation is quickly stopped with heat, after which the leaves are carefully shaped and dried.

This processing method helps preserve the green colour of the leaves, their fresh herbal aroma, and their characteristic light astringency. The flavour remains vibrant and clean, without heavy roasted or smoky notes.

Preserving natural freshness. Timely processing allows the leaf to retain the aroma of young herbs, flowers, and fresh greenery. As a result, the infusion is bright but never harsh.

Gentle drying. The leaves are dried at a controlled temperature to remove excess moisture while preserving their natural aroma. Proper drying makes the flavour stable, clean, and expressive.

Where This Tea Grows

The tea is grown in the high-mountain gardens of Zedubani, where cool nights, sunny days, and pure mountain air encourage the tea leaves to develop slowly.

At high altitude, the tea bush grows more slowly, allowing the leaves to gradually accumulate aromatic compounds, amino acids, and polyphenols. This gives high-mountain green tea not only freshness but also a distinctive depth of flavour.

The difference between daytime and nighttime temperatures helps shape the character of the tea. During the day, the sun warms the leaves, while at night, the cool air slows their growth. As a result, the infusion develops a clean aroma, delicate astringency, and a long, refreshing aftertaste.

Harvesting and Processing

The tea leaves are picked by hand. The pickers select only young, healthy, and properly developed shoots. Hand-picking allows us to preserve the integrity of the leaves and use only high-quality raw material for production.

After harvesting, the leaves are quickly delivered for processing to preserve their freshness. Natural oxidation is then stopped through brief heat treatment.

The leaves are then carefully shaped and dried at a controlled temperature. Every stage requires close attention: excessive heat can conceal the fresh aroma, while insufficient drying can affect the purity and stability of the flavour.

The result is a fresh, full-bodied, and expressive green tea, combining notes of young herbs, wildflowers, light sweetness, and delicate astringency.

How to Brew

Use 4–5 grams of tea per 250 ml of water. The recommended water temperature is 75–80°C. Steep the first infusion for 1.5–2 minutes.

Do not use boiling water, as excessively hot water can make the flavour harsh and intensify the bitterness. The tea can be infused several times, gradually increasing the steeping time with each subsequent infusion.

With every infusion, the flavour changes: bright herbal notes become softer, while floral nuances and natural sweetness become more pronounced.
